Sweet Potato Casserole

Thanksgiving isn't complete without a homemade sweet potato casserole, especially when it's topped with roasted marshmallows.

Ingredients
· 1 ½ pounds sweet potatoes, peeled cut into 1-inch cubes (or as accurate as you can be)
· ¾ cup packed brown sugar
· ¼ cup butter, softened
· 1 ½ teaspoons salt
· ½ teaspoon cinnamon
· ¼ nutmeg
· ½ teaspoon vanilla extract
· 2 cups miniature marshmallows
Directions
Step 1
Preheat oven to 375°.
Step 2
Butter bottom and sides of baking dish.
Step 2
Sweet Potatoes: Place sweet potatoes in a large pot and bring to a boil, then lower heat and let simmer for about 15 minutes, then drain and cool potatoes.
Step 3
Once the potatoes have cooled enough, place in large bowl and add the butter, brown sugar, salt, cinnamon, nutmeg, and vanilla extract. Blend together using a a blender. Blend until mixture/texture is smooth. Scrape mixture into a 11 x 7-inch baking dish. Place in oven for 15 minutes. Take out of oven, sprinkle marshmallows over top, turn oven heat to broil, and place dish right under broiler. Watch carefully so marshmallows do not burn. 5-10 minutes max.
Step 4.
Serve to your guests and enjoy.
