Easy Mediterranean Bean Salad

A simple three bean salad recipe brimming with Mediterranean flavors from fresh herbs,

capers, and a tangy Dijon garlic vinaigrette.

Ingredients

  • 1 15 oz can kidney beans, drained and rinsed

  • 1 15- oz can cannellini beans, drained and rinsed

  • 1 15- oz can chickpeas drained and rinsed

  • ½ cucumber, diced

  • 1 cup cherry tomatoes, multi-colored if you like

  • 1 cup chopped fresh parsley

  • 2 tablespoons diced fresh mint leaves

  • 2 tablespoons diced fresh basil leaves

Garlic Dijon Vinaigrette

  • 1-2 garlic cloves minced

  • ½ tablespoon Dijon mustard

  • 2 tablespoon lemon juice

  • 1 teaspoon sugar

  • ¼ cup olive oil

  • Salt and black pepper

 Instructions

  1. Salad: In a large mixing bowl, combine beans, cucumber, tomatoes and herbs. Mix well, ensuring that the herbs and other ingredients are well mixed together.

  2. Vinaigrette Dressing: In a small bowl, whisk together the garlic, Dijon mustard, lemon juice, sugar and olive oil and salt and pepper.

  3. Drizzle the vinaigrette over the salad mixture. Mix well with a spoon.

  4. Cover and refrigerate so the beans can marinate in the vinaigrette flavors. Before serving, mix the ingredients one last time.

  5. Enjoy.
