Easy Mediterranean Bean Salad

A simple three bean salad recipe brimming with Mediterranean flavors from fresh herbs,

capers, and a tangy Dijon garlic vinaigrette.

Ingredients
1 15 oz can kidney beans, drained and rinsed
1 15- oz can cannellini beans, drained and rinsed
1 15- oz can chickpeas drained and rinsed
½ cucumber, diced
1 cup cherry tomatoes, multi-colored if you like
1 cup chopped fresh parsley
2 tablespoons diced fresh mint leaves
2 tablespoons diced fresh basil leaves
Garlic Dijon Vinaigrette
1-2 garlic cloves minced
½ tablespoon Dijon mustard
2 tablespoon lemon juice
1 teaspoon sugar
¼ cup olive oil
Salt and black pepper
Instructions
Salad: In a large mixing bowl, combine beans, cucumber, tomatoes and herbs. Mix well, ensuring that the herbs and other ingredients are well mixed together.
Vinaigrette Dressing: In a small bowl, whisk together the garlic, Dijon mustard, lemon juice, sugar and olive oil and salt and pepper.
Drizzle the vinaigrette over the salad mixture. Mix well with a spoon.
Cover and refrigerate so the beans can marinate in the vinaigrette flavors. Before serving, mix the ingredients one last time.
