Mediterranean Zucchini Fritters Recipe

Using fresh herbs from the Mediterranean, this a flavorful, vegetarian option, easy and quick to make, especially if you like zucchini.

Prep Time:              15 minutes            

Cook Time:            30 minutes

Ingredients

Spice Mixture:

·      1 teaspoon dry oregano

·      1 teaspoon dry thyme

·      1 teaspoon dry rosemary

·      1 tablespoon dry parsley

·      6 tbsp all-purpose flour

 

Zucchini & the rest

·      3 zucchinis peeled

·      2 large eggs

·      4 onions chopped

·      ¾ cup fresh dill chopped

·      ¼ tsp black pepper

·      ½ tsp salt

·      6 tbsp olive oil divided

Decoration:

·      Parsley

 

Instructions

  1. Preheat: Oven to 400 degrees.

  2. Zucchini. Rinse the zucchini and then grate into a large bowl or colander. Will need to drain as much excess liquid as you can.

  3. Flour/Spice mixture: Combine the spices and the flour together. Mix until everything looks combined.

  4. Batter. In a sperate large bowl, place the eggs and then whip together, i.e mix the egg whites and the yolks together.

  5. Combine. Once as much water can be drained from the zucchini, add the zucchini, the onions and the to the flower mixture with the egg batter. Blend until all ingredients are combined.

  6. Cooking: Fry or Bake: Fry: In a medium sized skillet over medium heat, warm 2 tbsp olive oil. Once the olive oil is warm, pour about 2 tbsp of the batter into the pan and fry for about 5 minutes. Then flip and cook for 3 minutes on the other side. (or longer, you determine how long you want to fry them. Need to make sure the is cooked through.) Then remove from and let cool.

  7. Baking: With olive oil, coat the bottom of a cookie sheet. Pour spoonful sized portion of batter on to sheet. Place in oven and bake for about 30 minutes.

  8. Once the fritter has cooled down enough, taste it to make sure it has the right amount of spice to it. If not, add more. If it’s to your liking, then proceed with cooking the rest of the batter adding more olive oil if needed.

  9. When fritters are done cooking, place on a plate lined with paper towels so the towel can absorb any excess oil. 

10. Serve: Place fretters on a beautiful serving dish. Decorate with parsley.
