Mediterranean Bean Salad

A combination of three Mediterranean beans, fresh herbs, and a zesty Dijon vinaigrette salad

dressing make this an ideal summer salad. Its quick and easy to make. For more variety, change the beans and try other fresh herbs. Experiment and come up with your own favorite flavors.

Ingredients
1 15 oz can kidney beans, drained and rinsed
1 15- oz can cannellini beans, drained and rinsed
1 15- oz can chickpeas drained and rinsed
½ cucumber, diced, or cubed
1 cup cherry tomatoes or multi-colored if you like, cut in half
1 cup chopped fresh parsley
2 tablespoons diced fresh mint leaves
2 tablespoons diced fresh basil leaves
Garlic Dijon Vinaigrette
1-2 garlic cloves minced
½ tablespoon Dijon mustard
2 tablespoon lemon juice
1 teaspoon sugar
¼ cup olive oil
Salt and black pepper
Instructions
Salad: In a large mixing bowl, add the beans, cucumber, tomatoes and herbs. Mix the ingredients together making sure everything is mixed together.
Vinaigrette Dressing: In a small bowl, whisk together the garlic, Dijon mustard, lemon juice, sugar, olive oil and dashes of salt and pepper.
Combine: Drizzle the vinaigrette over the salad mixture and mix together.
Refrigerate: Cover and place it in the refrigerator so the beans can marinate in the vinaigrette flavors.
Serve: Place in your favorite serving bowl and mix the ingredients one last time.
