Ingredients
· 1-pound Carrots, cut into even 1 ½-inch pieces (or pound of baby carrots)
· ¾ cup Water
· ½ teaspoon Kosher Salt
· 1 Tablespoon Honey
· 1 Tablespoon Dijon Mustard
· 1 Tablespoon Red or White Wine Vinegar
· 2 teaspoons Olive Oil
· 1 tablespoon chives or other herbs to choice.
Instructions
1. Honey mixture: In a small bowl, whisk together the honey, Dijon Mustard, wine vinegar and the olive oil. Set off to the side.
2. Carrots: Place carrots in a medium sauté pan, and then pour the water over the carrots. Place over medium heat. Sprinkle salt over top and bring to a simmer, then simmer for about 10 minutes. Stirring occasionally to ensure they are cooking. (If the water cooks off before they are finished, add a little bit of water back to the pan.)
3. Once carrots are cooked through and are tender, place in a strainer to drain the rest of the water. Shake excess water, then pour carrots into your favorite serving dish.
4. Pour honey mixture over carrots, then stir to ensure honey mixture mixes well with the carrots. Sprinkle with chives or your preferred herbs.
5. Serve to your guests and enjoy.
