Zesty Lemon Chicken with Bulger

This Greek inspired dish is a tasty one pot meal that is packed with flavors. Fresh oregano,

thyme, and dill give the dish the perfect herbal kick, with a nice lemon zesty flavor. Perfect for a tasty dinner for the family, or oneself.

Ingredients
Spice Mixture:
· ½ teaspoon salt
· ½ teaspoon ground pepper
· 1 tablespoon fresh oregano
· 1 tablespoon fresh thyme
Chicken & rest of it
· 2 tablespoons olive oil
· 1 pound boneless chicken breasts, cut into bit size pieces (or chicken thighs)
· 4 garlic cloves
· 1 cup scallions
· 1 cup diced red bell pepper
· 1 medium lemon
· 10 cups lightly packed baby spinach, or a 5.5 oz bag of small spinach
· 2 cups chicken broth
· 1 cup bulger
Decorations:
· 1 tablespoon Dill
· ½ cup fetta cheese
Instructions
1. Onions/Garlic. In a large skillet over medium heat, warm the olive oil until its shimmering, but not smoking.
2. Garlic: Add and cook until fragrant.
3. Scallions/red pepper: Add scallions and red pepper to pan, sauté for about 2 minutes, or until they begin to soften.
4. Chicken. Add chicken to a large bowl, then sprinkle with pepper, oregano, thyme, and salt. Mix together. Squeeze half of the lemon over the chicken and herbs. Mix again.
5. Combine: Add chicken to the onions and cook until chicken begins to brown.
6. Spinach. When the chicken is cooked add spinach by the handful. Stir the spinach with the other ingredients until it wilts, about 2 minutes. (The spinach will cook down, big time.)
7. Bulger. Add bulger to pan and stir.
8. Chicken broth: Add broth to pan and bring to a boil. Reduce heat, squeeze the other half of the lemon over ingredients. Cover and simmer for about 10 minutes. Stirring occasionally.
9. Remove: From heat and stir, making sure the bulger has absorbed the broth. Let sit for a few minutes.
10. Decorate: Sprinkle the dill and feta cheese over the with the other ingredients.
11. Serve: Place in your favorite dish.
